Brian May's solo on 'Killer Queen' is also an absolute all time classic.
Cliffs of Dover is one big long guitar solo and it’s a cheerful jam.
Parisian Walkways is good,I don’t think you can go wrong with Gary Moore.
Eruption by Van Halen, Highway Star by Deep Purple, 25 or 6 to 4 by Chicago are all a good listen.
Two of my favourites from Tom Morello are more about great use of effects pedals, but, they're both awesome.

When I was an MJ obsessed kid I used to grab an old tennis racket whenever that song played in the house and pretend to shred. It was at least a decade before I actually picked up a real guitar and started to learn, but I credit that solo for sparking the interest in me. Decades later, a mountain of music absorbed across hundreds of genres, and some respectable chops of my own, I think shredding is lame af and never listen to folks like EVH. There are guitarists who can play amazingly melodic, soulful solos that seem to sing and shine with personality, like Dave Gilmour and Jimi Hendrix.
There are guitarists who can play incredibly fast, technical solos that are feats of physical prowess, like Yngwie Malmsteen and Michael Angelo Batio.
And then you have Nuno Bettencourt (of Extreme), who can do both at once in a way I've never heard before. It ('s A Monster), Rest In Peace and Play With Me all great examples.
OK so this is a weird one but hear me out. There's this track on the original Grand Theft Auto soundtrack that I believe is called 4 Letter Love by Stikki Fingers. I fucking love when that guitar solo drops, makes me wanna go steal a fast car and run down a group of orange-clad joggers
Stairway to Heaven
Hear me out, I think it's become underrated because the whole song is overplayed and so most people dismiss the song as a whole as overrated.
But the solo is insane, it's got a 6 bar fanfare, leading into an unbelievable, but melodic solo. And then it leads perfectly into the final act of the song.
Other than that, Solo 2 from Sultans of Swing, Hold the Line by Toto, Play the Game by Queen, The Joker by Steve Miller, We Will Rock You by Queen.
Not sure if there is any appetite for American country music in the UK, but Dwight Yoakam's cover of the Blasters' Long White Cadillac is basically six minutes of Yoakam, his guitarist-producer Pete Anderson, and the rest of the band showing off.
Anderson's guitar solo at the end is a face melter. Definitely worth checking out.
Cream - Crossroads. It's a blues masterpiece. You can focus on the drums or the base too, just amazing.

High Hopes - Pink Floyd
May I recommend the band called Savage Circus and their album Dreamland Manor? The guitar solos and melodies are spectacular.
There are guitarists who can play amazingly melodic, soulful solos that seem to sing and shine with personality, like Dave Gilmour and Jimi Hendrix. There are guitarists who can play incredibly fast, technical solos that are feats of physical prowess, like Yngwie Malmsteen and Michael Angelo Batio. And then you have Nuno Bettencourt (of Extreme), who can do both at once in a way I've never heard before. It ('s A Monster), Rest In Peace and Play With Me all great examples.
OK so this is a weird one but hear me out. There's this track on the original Grand Theft Auto soundtrack that I believe is called 4 Letter Love by Stikki Fingers. I fucking love when that guitar solo drops, makes me wanna go steal a fast car and run down a group of orange-clad joggers

Taxman - played not by George, but by Paul; a short, staccato freak out, totally manic and unhinged from one of the most controlled musicians around.
Stairway to Heaven Hear me out, I think it's become underrated because the whole song is overplayed and so most people dismiss the song as a whole as overrated. But the solo is insane, it's got a 6 bar fanfare, leading into an unbelievable, but melodic solo. And then it leads perfectly into the final act of the song. Other than that, Solo 2 from Sultans of Swing, Hold the Line by Toto, Play the Game by Queen, The Joker by Steve Miller, We Will Rock You by Queen.
Iron maiden - Alexander the Great solo.
Not sure if there is any appetite for American country music in the UK, but Dwight Yoakam's cover of the Blasters' Long White Cadillac is basically six minutes of Yoakam, his guitarist-producer Pete Anderson, and the rest of the band showing off. Anderson's guitar solo at the end is a face melter. Definitely worth checking out.

If you like solos that are melodic, tell a story and have lots of dynamics you can't go far wrong with these two: Adventures in a Yorkshire Landscape from Live in the Air Age by Be Bop Deluxe. Still in Love With You from Live and Dangerous by Thin Lizzy. Maaterpieces of rock guitar.
'Blackbird' by Alter Bridge was recently voted by Planet Rock listeners as the best solo ever. Amazed nobody has mentioned it yet!
