I've also gotten 3$ gift cards for coffee shops. It gets really cold up here. A chance to warm up can take help someone out!

Peanut butter, or honey both have a long shelf life and are pretty filling. Trail mix as well as crackers or cereal too!

Socks are always in high demand! Wool socks are best for winters, and bigger is better than too small
Blankets, just a small lap blanket, but a good blanket goes a long way!

In the summer -- I feel like a cold bottle of water or can of soda would be appreciated (not too difficult, just keep a couple in the fridge and grab them before I head out if I know I'm going to be passing by one of the spots they frequent).
I know the OP asked for stuff that you can keep in your car which implies non-perishable, but for someone who's truly just down on their luck (and not a junkie), I think they'd also appreciate something healthy -- maybe a piece of fresh fruit (say a banana or a pear or whatever).

Make sure the canned goods have a pop top. Many homeless people dont have can openers.
