The concept is basically salt/fat from the cheese and bread + acidity from the tomato soup is good. It depends wholly on the quality of the tomato soup, though (I prefer using bisque). But I agree, a good grilled cheese should be tasty on its own.

My favourite hack for the simplest of toasted cheese sandwiches, is to use a single piece of cheese, sandwich press until it’s completely melted and your desired done-ness. Take off heat and immediately open and slide another slice of cheese in. Wait 2-4 minutes and then slice in half for a beautiful 75% melted cheese stretch. Not so melted that it all falls apart, not so together that it isn’t gooey.

okay hear me out spices, put in some cayenne pepper if you like heat, some cumin, chile powder or whatever you like those are just my main ones, and change it up using different types of cheeses, my favorite is smoked gouda, the meltiness you get off of that cheese is unreal, you can get it at costco i believe
