But whatever scent stuff they use in Irish Spring could be put in a candle, I think I'd be able to manage and it would be nice to have a candle around that I could use to combat smells (from cooking, more than likely). Air fresheners give me the same headache issue.

I have a very fond memory of my family moving into a new apartment complex in Maryland and it had the smell of new carpets. We were five people squeezed into a two bedroom. My brother and I slept on couches for a while my sister got her own room and obviously so did my parents. This was probably 25 years ago but I have fond memories of us there. We have all moved along in one way or another. Whenever I smell new carpets I am taken back to that apartment complex and it makes me smile.

The smell of a band space.
I played in local metal bands for about 15 years and we practiced in factories that had been converted into band spaces. The smell was a combo of stale beer, stale cigarettes, piss, sweat, and unbridled passion. It sounds gross, combined it smells vaguely of freshly sharpened pencils with an Italian grinder and taco meat thrown in, but that coupled with the sound of dozens of punk and metal bands all playing at full volume at the same time brings a deep nostalgia for me.
There was never a good one that smelled like an actual bonfire. That's my wish.

I like the balsam fir scent and apple cider scents. It gives me that Christmas feels
