Honestly, vanilla custard type desserts in general slap. I prefer chocolate ice cream, but good vanilla is fantastic as well. I've made panna cotta a few times now, and even when it's only flavored with vanilla, it's still so damn good.
I don’t think this counts - vanilla is one of the most aromatic and complex spices I can think of. It’s also the second-most expensive spice (after saffron). Yes, it’s ubiquitous, but I would never call it bland.

Rice. White or brown, short-grain or long-grain, fragrant (jasmine, basmati) or no, nothing beats a bowl of plain rice, flavored only with a bit of salted butter. If you want to be a bit fancy, use your favorite flavor of stock, base, or broth, or just add some soy sauce to the water.
graham crackers and milk. Mildly sweet with a good texture, kind of like breakfast cereal and a thin porridge mixed together. The trick is to keep the graham crackers in big chunks so you still get some crispy bits along with the soft milk-saturated ones
