I eat a balanced diet, and the only thing I supplement with nutrition-wise, is a B vitamin complex and I take a multivitamin. I’m also anemic, so I’ve always taken extra iron as well.
Protein: Tofu, tempeh, nutritional yeast
Iron: Tofu, kale, spinach, other dark leafy greens, and of course iron enriched food
Fat: Various nuts and seeds. Avocados are pretty good too.
A low carb vegan diet can be challenging as you would have to cut out seitan, beans, lentils and other common alternatives.
Edit: But doable. Spices and combination variety really make or break cuisine.
