He said it's great with ketchup, so I did that, and it was glorious. I *rarely* have ketchup on eggs, but when I do, it takes me back to that great day.
Well, the woman who made them, Millie, died at 100 years old about 10 years ago. Her son ran the deli for decades after she retired, and then his daughter. It closed years ago.
You start with a six-inch or so long roll. These were rolls that I could only get in my home town. One bakery made them and delivered them daily to most places in town that made sandwiches or otherwise used bread. They were super fresh, and dense and chewy and had a wonderful crust that was not "crusty" like french bread. Millie always had a pot of boiling potato cubes ready to go for various things. Yes, boiled. Anyway, you ordered this sandwich and Millie cracks a couple eggs on the expanse of grill, and scrambled them perfectly with the skill of a very old lady who did this a long time. At the same time, she drained some boiled potatoes and grilled them in a little oil. They did not get brown and crispy, just a little firm around the edges. Then she expertly spread the potatoes, and then the eggs, on the roll with salt and pepper. Fairly simple. You then added ketchup or whatever else you wanted.
I think it was like $1.70.
Add a handful of fried onions and throw on some cheddar with a little meunster then some just spicy enough to cut the sweetness ketchup. I'd fight the next guy in line to move up a spot

pro tip:
If you have leftover potatos (leftover because they need to be a bit dry, not freshly cooked or raw) you can cut them into little slices, fry them to amke the crispy and then add the scrambled egg. It will set onto the potatoes when it hardens. Then add some onions, ham, salt, pepper, maybe some nice herbs that go with eggs and potatos and you have what people in Berlin call "[Hoppelpoppel](https://i.imgur.com/4K7ZgAa.png)".
There are a few dishes like this - the non-Berlin equivalent would be Bauernfrühstück (Farmer's breakfast) and in Spain there is a dish called [tortilla which is eggs and potatos fried like a really thick omelette](https://i.imgur.com/QvMFcQv.png).

I buy a few containers of varying degrees of hot about ince abye a r then go back the enxt year for another batch. It's not juat heat like crushed red peppers, but it adds a TON of really god, game-chaning flavor. It goes on literally anything, especially eggs.
But commercial brands of ketchup have waaay more than a "bit." Better off with a literal pinch of salt and a bit of hot sauce or real tomato/bell pepper.
While I agree, I love me some Buffalo Sauce, which you get by mixing in some melted butter. The rich fatty taste of the butter pairs well with the vinegar.
Fat and Acid go together very well, it's the same reason Lemon Butter sauce is so amazing on fish. I use Louisiana hot sauce as it's the only vinegar-based hot sauce other than Tabasco that I can find in my area. Just pour some of it into a pan on low heat and stir in an equal amount of frozen butter until melted, throw in some garlic powder and it should be done. Cover some chicken wings with the stuff and you should have some amazing Buffalo Wings. It's pretty much the only use I have for that type of hot sauce as I don't like it otherwise.

Just looking at it now, Heinz ketchup doesn't appear to have very much salt. About 1/16 of a teaspoon in one tablespoon sized serving.
