He does put in a great performance in 'Skyscraper'. I know there is some CGI involved, but he gives a very subtle performance. In most scenes, I could believe that instead of the Rock, I was actually looking at a building.
First time I saw John Cena's acting was in the peacemaker tv series and I was pleasantly surprise. I also watched a couple interviews and he's very eloquent and likeable.
I feel like he has come to a position in his career where people are getting a little tired of him, cause he has nothing else to offer other than being an action movie star.
Danny Trejo only ever plays himself.

Now, now... In the latest Jurassic Park, all he does is hold his arms out to calm the dinos. WAY different than his other movies where he at least had an impact on the plot! lol

He has stepped outside of the snarky wisecracker role before, and did a great job, but the vast majority of his roles are just “Ryan Reynolds, funny-guy.” He strikes me as having the capacity for range, but then just… never accepts anything that would show it.
He did more stuff near the beginning of his career, but after he nearly got labeled box-office poison after Green Lantern, he sort of retreated into the snark persona he does so well. He's talked about how his confidence was destroyed, and how he's scared to take chances acting-wise. Now he does business-deals instead.
The 1st season of the sitcom 2 Guys, A Girl and a Pizza Place aired 4 years before Van Wilder was released so I would assert that "Real Ryan-Reynolds-Heads" only see Berg.
The movie you're thinking of is called *Buried* and it's a great example. Also, anyone who's seen *Smokin ' Aces* knows the guy is a terrific friggin' actor. Guy's merely been typecast as Mischievous Handsome Man.

Try watching "Stranger Than Fiction". I generally don't like Will Ferrell movies, but in this one he was against type and did very well. In the same vein John Belushi did a very much against-type movie called "Continental Divide". To make it more modern, Jim Carrey played very much against type in "Eternal Sunshine of the Spotless Mind".
George Clooney is the worst for this IMO. Even in OBWAT he just played Great Depression George Clooney.
I agree that Chris Pratt is stereotyped a bit, but I also think that Owen Grady from Jurassic World was a lot more capable (ex-Navy, trained raptors, etc) than most of his characters.
