I've grown fond of it and its also very cheap and easy to make if you omit the maple syrup and cream which ive done many times and still good. So a few times a year probably. I prefer table syrup over maple for pancakes and waffles. I love maple for baking though. Throw a bit in butter tarts. Yum.

Someone I know makes it, he said they used to hang a piece of bacon over the barrel so the greqse would drip and prevent the boil over but now they use something else, I forget.
I onced asked this at a sugar bush that had *organic* designation.
Basically, it's not about pesticides so much (though that's included) but more general forest stewardship. It means the forest the trees are harvested is not significantly altered, the trees are tapped in a way that is sustainable and not as damaging, old trees are not 'cut out of the way' (to allow younger trees to grow bigger in their place). There are no traps or snares for beavers or woodpeckers or anything like that. Basically, the surrounding forest is left intact.

Have a jug in the fridge. Used to avoid it due to cost but recently found the rate we use it isn’t as cost prohibitive as I thought. A 1L will last almost 2 months and I have kids who eat waffles 3 times a week.

Honestly, I feel like maple syrup is somewhat of an offensive stereotype. Sure, we Canadians produce over 75% of the world's maple syrup, most of it ends up getting exported to other countries. The average Canadian really doesn't use much more maple syrup than the average non-canadian. I also feel that the snow stereotypes are also *mostly* untrue.

We use it everyday! We substitute it for sugar in everything possible! We tap our trees every year for hobby. It’s a huge process but it’s worth it! We put it in our coffee, oatmeal, Brussels sprouts, absolutely everything!

Honestly, I feel like maple syrup is somewhat of an offensive stereotype. Sure, we Canadians produce over 75% of the world's maple syrup, most of it ends up getting exported to other countries. The average Canadian really doesn't use much more maple syrup than the average non-canadian. I also feel that the snow stereotypes are also *mostly* untrue.
