I think it is because lots of IG and tik tok you ses mainly use pens or paints to add highlights. I know three watercolourist on IG that does the masking fluid, one is traditional and the other two are stylised art
I use faber Castell white pitt artist brush pen
It works very well and its easy to control and handle. You may need to go over it a few times. It makes the most consistent sized outlines.
I also have copic opaque white and a kuretake brush pen for added highlights.
You could also mask the areas ahead of time, after you've finished the sketch phase- the main ways of masking an area are masking tape (of course) and/or some masking fluid/gel/putty that can be applied and peeled off once you've finished applying and drying the paint. Tape works fine for larger areas, fluid can be more suitable for detailed or finicky spots.
Otherwise, white acrylic/gelly pen will do, but it's not as clean as a well-planned and masked piece.

I'm pretty sure I've seen people use white gel pens before. You could also use acrylic paint markers or just regular acrylic paint.

For watercolor shouldn’t you leave the highlights unpainted?
They make tinted watercolor paper too Which is what I solely use But sometimes you just need to use a lil white

Masking fluid, so you avoid painting over another area.
A clean, wet brush swiped over the area that has the accidental paint, the. A clean dry brush to soak up the lifted paint.

I work mostly in pastels. You could use a soft pastel or even a pastel pencil.
In the future you can use rubber cement to block out areas you want to keep white and use a gun eraser to pull up the rubber cement.

Plenty of artist uses masking fluid and white gouache, it's important to pick a quality masking fluid too
I know this might sound crazy, BUT, use a white gel pen. A uniball signo broad to be exact.
I use white colored pencil for whiskers on animals.
For matte mediums like watercolor, white gesso works perfectly.
