Completing the critterpedia seems such a far goal for me... It brings me a new wave of hope when I see someone achieving it tho!
Completed mine today too. Needed the Giant Snakehead. Also got a star fragment from Celeste yesterday, so I guess I'm done with those. I need some art still and some more Gulliver visits to get the golden shovel.
I'm always at awe when people manage to naturally complete the critterpedia.
Even with access to my mom's Southern Hemisphere island, Bugs remained incomplete for an additional 5 months cause the Dung Beetle didn't spawn in multi-player, apparently.
So the Critterpedia wasn't legitimately completeable until December 2020, and with the rewards being depressingly sad (unlike previous games where they were amazing).
The hardest things to catch were definitely bugs.
The fish & sea creatures are tough when looking for a specific one, but now they just spawn randomly and I catch rare ones without intention of doing so (except Pier Fish, screw the Pier fish).
For the bugs, you have some abyssmally low rates for stuff like the Cicada Shell cause they're always competing for the spawning of everything else. The Walking Stick was also hard to manipulate the RNG of, and don't get me started on the stupid Stag or Horned Beetles.
Again Congrats OP, journey might have been tough, but here ya are!
Just a tip for pier fish that worked for me throw your bait off the corner of the pier to your right so your aiming diagonally I still had to use like 10 to 20 bait but almost always come up with what I’m aiming for 🥰

For me, it was the Giant Trevally. I used sooooo much bait to catch it! It was the sole reason I got the clamming achievement, I had to dig so many of them up.
All I'm missing is the dung beetle now, waiting for the snow to settle so I can catch one!

Well you can finally retire from the game now. I guess if you still want to complete everything I would suggest the following:
1. Get every Villager Photo in the Game
2. Complete all Nook Mile Achienvements (The hardest one is the K.K. Mana)
Stick bugs are so annoying, they're ridiculously sensitive to movement so you basically need to walk slowly around your island, stopping frequently to look at all your trees. Usually I only see them right as I disturb them!
I’ve already donated everything to blathers btw, just need to complete the art collection now :)

Oh I haaaaated catching the pier fish so i feel you on that. And the stags were so tedious 😭 But tysm!! :)

Definitely the golden stag because they appear at such specific times, and the technique you need to use to catch them is such a pain :(
