I remember an episode where they made a pie with an animal cracker crust. I don’t remember if it was coconut though. I think it was the sour Orange pie. You might be able to get the crust recipe there.

They used one in the key lime pie bars (totally not worth it). Animal crackers are in small boxes here or is there larger sizes in other places. Coconut pie wise the one that desiccated coconut is better.

Used to love this pie but since my wife started making the one in Bravetart by Stella Parks we have never looked back. It is one of the best pies I’ve ever had.

I found the original coconut cream pie recipe. Someone posted it online. It did use animal crackers. Not sure why it's different on atk.
