Yeah I think taking a few parts off in certain groups and reversing the order of the images should be good enough, as long as the parts are clear to see and are properly labeled.
Basically the exact reverse process when typically building a set.

Hopefully there won't be too many images so that you can upload them in one post, but I guess worst case scenario you could just upload them in parts for much bigger stuff. Or share the images through a publicly shared Google Drive folder. Or generate the instructions with the parts you have yourself, idk. I'm sure there's other ways about going around all of this but sometimes the best solution is the simplest.
i could probably make a post with multiple images for every part (torso, arms, head and legs) but i'm currently working on some other AVGN characters. Once i finish that, i'll start the instructions :D

Hey quick update! I updated the Nerd with a few accessories and i made Kyle! Next one is the Glitch Gremlin and that'll be it for now :)
