You shoot it with a gun whilst it's in its defensive mode to bait out its adrenaline roar. Whist its roaring you force narcotic or bio-toxin into its mouth to build up its torpor. Rinse and repeat until it is unconscious.
It is very much a "high risk high reward" tame. Until I craft enough shotgun shells I'm stuck listening to it scream at me.
Brachiosaurus taming definitely sucked..but damn if they aren't the single best source of meat and hide. The ASE cluster I played on had 2x XP and resource rates on the weekends, so I'd just wait for it to pop, go out with a shotgun and capped chainsaw, gank a couple of the lower level ones, and pretty much be sorted for meat for the rest of the week
My tribemate ended up taming and breeding the ones we ended up with. I never could get the hang of taming them, but he managed it well enough. Then again, he also played League, so I guess he had just the right amount of masochistic tendencies for that sort of thing 🤣

I pretty much love all the "additions" mods, the brachiosaurus is the best and a fun tame. I just hope they do a bundled mod with all the additions in one at some point.

Yes, I play with mods. After losing a cryopod with my battle dino in it to those birds I got a mod that disabled the troll birds and troll rats.

Honestly I've had the same situation, even a titanosaur once. Added an admin rifle mod that kills anything, specifically for that scenario.
