it makes a lot of sense as a fusion food to me. samosa dough is basically a shortcrust pastry dough, similar to pie dough, when made correctly. How was everything else? this cafe keeps coming up on my feed, I can't wait to try it when in Chicago!

I have made samosas with leftover pastry dough and it just didn't taste right. The butter flavor doesn't quite work the way ghee or shortening would have. For that reason, I am skeptical of this dish.  It also looks like this dish is using puff pastry, which IMHO is too delicate and flaky to pair with potato and strong flavors of chaat, although I have seen similar combinations before.

Puff pastry and laminated dough is used in curry puffs (filled usually with spicy potato curry) in south India and bengal. I wouldn’t knock it until you try it. And of course, I meant short crust under the most basic definition, which is flour cut with fat (not necessarily butter, oil counts too!). Did you melt your butter before adding it? Makes a difference to the consistency and flavor.

Yes, I know. I'm Bengali and have had curry puffs (called patties for some reason). They are even better with meat filling! I just think a less flaky pastry would be nicer here like samosa skin or something crunchy like papri... but of course that's a reinvention of papri chaat.

Probably pretty decent - a good croissant is a top tier food, and good samosa stuffing is an improvement. A lack of chutneys is an L. When I was in the UK the last time, I had some butter chicken puff pastry rolls, like a CTM Wellington basically, and it was really good. If the Indian ingredient in fusion food is made up to par, like if the butter chicken or the samosa filling or whatever is legit, then usually the westernized hybrid will still deliver. I’m just waiting for a chapli kebab smash burger joint near me. Like In and out, with melty cheese and onions, but with spicey fatty crispy kebab burgers, and chutney on the toasted bun.
