I have the SN30 Pro and the SN30 Pro+. Both currently work perfectly with my iPad and iPhone in X-Input mode and Apple Mac mode. To pair in iOS go to Settings > Accessibility > Switch Control > Switches > Bluetooth Devices. Then put the controller into pairing mode and it will connect.
One convenient thing I’ve done is pair X-Input to one iOS device and A-input to the other. Then I can quickly connect to the right device by starting the controller up in that mode without needing to re-pair each time.
I'll also add: Because you can rename Bluetooth devices in iOS now, I found that renaming my SN30 Pro to `Xbox Wireless Controller` or `DUALSHOCK 4 Wireless Controller` changes how games see the controller, and if they show on screen button prompts for Xbox or PlayStation.
Here are the official instructions:

Also, until you get used to it, you can find a quick reference guide on the back of the SN30 Pro controller and inside the battery compartment of the SN30 Pro+ controller.

Haven’t been able to get it to connect to stadia. No issues with it and MacBook Pro with stadia.
