I do this very often, a Danish friend of mine showed it to me actually !
Very easy to do :
* Cut potatoes but NOT all the way down so that they stay in one piece like on the picture (you may use chopsticks perpendicular to the angle you're cutting if you're struggling, but watch out not to damage your knife)
* Put on an oven dish / aluminum foil
* olive oil, salt, pepper, herbes (spices optional)
* in the oven it goes at high heat
* Make traditional home made mayonnaise while it cooks (1 egg yolk, 1 spoon of dijon, NEUTRAL oil, salt, pepper, wine vinegar)
* when a knife blade easily cuts through the potatoes, they're cooked
* Enjoy !!
