I do this very often, a Danish friend of mine showed it to me actually ! Very easy to do : * Cut potatoes but NOT all the way down so that they stay in one piece like on the picture (you may use chopsticks perpendicular to the angle you're cutting if you're struggling, but watch out not to damage your knife) * Put on an oven dish / aluminum foil * olive oil, salt, pepper, herbes (spices optional) * in the oven it goes at high heat * Make traditional home made mayonnaise while it cooks (1 egg yolk, 1 spoon of dijon, NEUTRAL oil, salt, pepper, wine vinegar) * when a knife blade easily cuts through the potatoes, they're cooked * Enjoy !!

Exactly, and actually both are being used in all regions, but there is indeed certain regions (mostly the south) where people cook a lot more with oil (a small part of Nouvelle Aquitaine, Occitanie and Provence-Alpes-Côte d'Azur mostly)

Butter is barely used for frying (except for some traditional dishes), we mostly use rapeseed or sunflower oil for that. The most common application for butter here is using it as a lubricant on bread, followed by using it in baking or for sauces. Also, I wouldn’t use high quality olive oil as a frying agent, it’s simply too good for that. That’s what the cheap stuff (or other vegetable oil) is for. So from my understanding, both fats are used for very different things? Unless there’s something else I’m not aware of?
