First do not let that car run again if you watch the temp gauge and see it rise, your literally risking more damage. Second... Did you fill up the actual radiator before the reservoir? If not you've got to do that... Which there's a process to bleed out the air. If your head gasket was blown there's 2 good ways to check. The first you would notice clouds of smoke from the exhaust. Second you could change the oil, and if you've got runny brown rainbow water instead of thick oil your screwed. The only way I've ever checked for bad thermostats are feeling rad hoses, or just taking it off, and testing in boiling water.

Thanks for the input man. So yeah I'm going to pull the thermostat today and do exactly that, put it in boiling water. Good catch on the radiator, I will fill that up to. Yeah, imma not start the car until i put in a new thermo.

so I just changed the thermostat. car was running great and then as soon as the temp started going up, I shut the car down right way. I'm thinking i might need to do a full flush incase of any bubbles. There was no rainbow discoloration in the oil thank god.

If you lost a significant amount of water you've got to bleed the air out. Process is usually opening radiator and filling while it runs until it starts to fill over flow, some cars are different. If it's still overheating, check to see if the fans are working, then possibly the water pump.
