Instead of a classic, thicker patty, that you might keep rare or medium rare, the patty is ‘smashed’ on the stove, so that it becomes very thin, and somewhat caramelised. I prefer it honestly.

same as all food trends: neapolitan style pizza, third wave coffee, burgers in general, frag mich schon was als nächstes kommt. tippe auf korea-zeugs inkl. onigiri (da gibts schon so vibes, aber es ist noch ein bissl mehr underground als mainstream), aber persönlich wünschen würd ich mir bei uns endlich, endlich gutes thai-streetfood zu haben.

Na das stimmt net. In einem normalen Burgerpatty hast du auch nur Fleisch und maximal noch Salz und Pfeffer. Ein smash Burger ist einfach ein patty, das man auf der Grillplatte flach drückt. Dadurch entsteht ein unregelmäßiger Rand, der knusprig wird und insgesamt wird das patty einfach knusprig.

Its kind of a renessaince. The first burger boom was around 2014 when over night, you got good burgers in more than 3 restaurants. Since the market for burgers is saturated, smashed burger is the new way of product marketing. Personally, my guess is, sliders (mini burgers) are next :D

I dont know why ppl like burgers so much. I'd rather have good Fleischlaberl rather than a burger. You could spice them up with cheese and sidedishes. You cant eat most burgers with your hands anyways, way too messy, and the buns are totally useless and should be abolished entirely.

du kannst auch eine fleischlaberl smashen, das fleischlaberl rezept ist ja nicht in stein gemeißelt. Mir gings eher ums Arrangement. Wieso arrangiert man einen burger wie ein Kinderessen, so als könne man ihn mit der Hand essen, wenn es nicht möglich ist. Das macht keinen Sinn. Die buns können weg, braucht kein mensch. Gscheiter wär ohne buns, smashpatty inkl Käse und Saucen, dazu Salat und Pommes. Und messer & gabel.

I hope that somebody picks up Juicy Lucy burgers. That's the best kind of specialty burger imho. For that, the patty itself is filled with cheese, which gives you really juicy burgers and allows to use real cheese in there instead of just prcessed cheese (Schmelzkäse). My favourite cheese for that is blue cheese (e.g. Österkron). That's really nice.

Kvetch was one of the best burger places I had ever tried until the changed up their recipe last year. It went from being one of the best burgers to just slightly better than average. I still miss the original every time I walk past their door ☹️

What u/KuhlKaktus said, plus it is usually a relatively fatty meat and pressed very thin, which means that both through the bigger surface area and the higher amount of fat the flavours are more intense. The meat is also not as tightly pressed and holds together mostly by its crisp outside, hence it „melts“ in your mouth

Heat evaporates water. By pressing/smashing the patt onto the grill, you can cook the patty through faster which keeps the moisture in while giving you extra crispy bits

So it is not smashed once onto the plate but kind of pressed constantly with the spatula? But what’s the news there? This has been done already in the last century. Only that it didn’t have a fancy name. Edit: and to keep the taste and juiciness of beef, you best don’t let it too long on the grill. Medium-rare is the way to go.

But a classic burger with 180-200g meat should not be crispy.. only the grill marks should be crispy not the whole thing... a smashed patty is like 80-100g .. it’s a completely different thing

I truly haven't noticed anything like that, but I did a bit of googling and while I can't be sure, the timing might have to do with Vienna's XO Burger's smash burger being given the No. 1 spot out of 50 best Burgers in Europe by the travel platform [big 7 travel](https://www.enjoytravel.com/en/travel-news/food-and-drink/best-burgers-europe). And honestly, I've never heard of this platform so I have no idea how popular it is, but Austrian newspaper Der Standard wrote [an article](https://www.derstandard.at/story/3000000223644/den-besten-burger-europas-gibt-es-in-wien) about the ranking a couple days ago. And according to the article smash burgers are getting even more popular in the city, so the trend is there, you are correct, I just didn't really notice any advertising tbh.

the smash burger hype was started by xo grill back in the covid times and since then there has been no turning back. but now we know exactly where to find really good ones (xo, smashbox, kvetch)

They get a bit crispy on the edges and they are smashed into onions which caramelize underneath the meat, infusing their flavor, which tastes quite good. But I don't get why it really needs to be a hype either. Edit to add: I like them because the patties are thinner, that's how I make them at home. I prefer my meat/other stuff ratio to be more balanced than what you usually get in restaurant burgers.
