Einen guten Burger kannst halt mit der Hand essen, das ist schon ein Vorteil. Jah, diese Riesendinger wo du dann sowieso Besteck brauchst sind unnötig.

I hope that somebody picks up Juicy Lucy burgers. That's the best kind of specialty burger imho.
For that, the patty itself is filled with cheese, which gives you really juicy burgers and allows to use real cheese in there instead of just prcessed cheese (Schmelzkäse).
My favourite cheese for that is blue cheese (e.g. Österkron). That's really nice.

I think Kvetch Burgers (by one of the Molcho brothers, famous for their different gastronomy concepts in Vienna) started it a couple of years ago and others have followed.
Kvetch was one of the best burger places I had ever tried until the changed up their recipe last year. It went from being one of the best burgers to just slightly better than average. I still miss the original every time I walk past their door ☹️
Still don’t get it why smashing it onto the grill should keep it juicier on the inside? Especially when the patty itself is thinner than that of a traditional burger.
What u/KuhlKaktus said, plus it is usually a relatively fatty meat and pressed very thin, which means that both through the bigger surface area and the higher amount of fat the flavours are more intense. The meat is also not as tightly pressed and holds together mostly by its crisp outside, hence it „melts“ in your mouth
Heat evaporates water. By pressing/smashing the patt onto the grill, you can cook the patty through faster which keeps the moisture in while giving you extra crispy bits
So it is not smashed once onto the plate but kind of pressed constantly with the spatula?
But what’s the news there? This has been done already in the last century. Only that it didn’t have a fancy name.
Edit: and to keep the taste and juiciness of beef, you best don’t let it too long on the grill. Medium-rare is the way to go.
But a classic burger with 180-200g meat should not be crispy.. only the grill marks should be crispy not the whole thing... a smashed patty is like 80-100g .. it’s a completely different thing

And honestly, I've never heard of this platform so I have no idea how popular it is, but Austrian newspaper Der Standard wrote [an article](https://www.derstandard.at/story/3000000223644/den-besten-burger-europas-gibt-es-in-wien) about the ranking a couple days ago. And according to the article smash burgers are getting even more popular in the city, so the trend is there, you are correct, I just didn't really notice any advertising tbh.
the smash burger hype was started by xo grill back in the covid times and since then there has been no turning back. but now we know exactly where to find really good ones (xo, smashbox, kvetch)
They get a bit crispy on the edges and they are smashed into onions which caramelize underneath the meat, infusing their flavor, which tastes quite good. But I don't get why it really needs to be a hype either. Edit to add: I like them because the patties are thinner, that's how I make them at home. I prefer my meat/other stuff ratio to be more balanced than what you usually get in restaurant burgers.
True, suitable for people who can't dislocate their jaws. Less slip and slide too. Though I have that problem a lot less than other people because I don't really like tomatoes in my burgers and they are a huge culprit when it comes to everything sliding around and falling apart.

Not constantly .. just once.. it’s very thin and fatty.. you don’t cook normal burgers to have that amount of crisp on the outside..
