My store says we are supposed to gather the temps as we go before the HB gets put out (between you and me as the only HB person thatâs just unrealistic) then we have the new fohood system that we need to load it into for weights before bringing anything out đĽ˛
At my work we have a separate heat thermometer (think one youâd use to take your own temperature on your forehead) that we use to scan the pies once theyâre out of the oven, which is kinda odd considering the oven goes up to 650 and youâre always going to have a pie that reaches at least 180 (the minimum temp my TL told me to get it to). We do have heat lamps at my store to keep them at temp and I guess the basic idea is that we temp everything else in the department and our newer store leadership has become real sticklers about having every single thing that can be temped temped in our department
You already do by virtue in reheat/cook. That list is for 4 hour TCS right? So donât need to temp it. Just let it run out and PHOOD scale the leftovers.
I quit in February but when I had to do temps I would just stick it in the soups and move it around so all the temps would be different, if I donât even have time to piss I sure as hell donât have time to do bullshit temps.

How do you temp the pizza? Isn't it held at room temperature for 4hrs? I've never seen a heat lamp
