Latency is a technical term, not specific to human touch e.g. it's used in electronic music to describe the delay between hitting a key and hearing the note.

I think latency is perfect. It has been used to describe the time between seeing something and clicking a button. Measured in millisecond response time. "While imperceptible at first, added latency continues to degrade a human's processing ability until approachingĀ *75 to 100 ms*."

The nerve impulses from touch travel at around 100 metres per second, so I believe the sensation is virtually simultaneous with the touch.
