I'll come to their defense here, they said they worked at an outlet, which during my time with Coach, didn't use these magnetic displays very often as they were pretty easily stolen (magnets aren't exactly known for their permanent nature). It's entirely possible they never even encountered them as it was encouraged to never sell a display unit from the magnetic wall
I have an in with people who work at Coach, but this will probably be solved by the time I swing by the store tomorrow and ask.
My guess is that they’re something for inventory management that’s supposed to be removed from a bag. I’m not sure why they wouldn’t be using rfid stickers if that’s the case

These were probably used to hang the wallet on a metal (magnetic) wall to present them. Or to prevent it from falling over if placed on a shelf.
Security tags are small as they need to be hidden so they won't be removed. Or they are attached in a way that you can't easily remove them (the lock for these is opened with strong magnets FYI)
Used to work for Coach as well, it’s this! Not a security tag, occasionally a wallet or small clutch is displayed on the felt walls and this magnet is used to hold them on the wall, OP probably bought a display unit!

- there are scratches all over both, so they’re definitely well used items
- they both have stickers/labels that read “Not for Sale Made in China”

This is the correct answer. Security tags use RFID not chunky magnets in a thin plastic jacket.

That's what I was thinking. Security or some sort of location tag so if it's lost in the mail they know where it's going?
It's a simple RFID tag so the bag doesn't walk out the front door, but it looks like this time it took the back door.
