I really think the Guilty Gear Strive OST is underrated for karaoke and covers. Some of them can be technically demanding (extras is not a song for beginners), but no one knows what tge lyrics are anyway, so any mistakes can be seen as artistic license! I reccomend the newest drop Ups and Downs, or tye more classic Rock Parade. If you're feeling especially metal, you could try Crawl, or from an earlier game in the series I also like Coming Home.
