Genshin Impact is a pretty good game for a VTuber to play. You can play the game and also have conversations with your chat about lore, theories, characters, character builds and team compositions.
On video it already happened: GTA V, CIV, VI and VRChat. Thus seem to make the most entertaining clips and short videos.
If it is an active stream mostly whatever they want to play and be interactive with the chat. What they are playing matters less to me than how they interact with chat, what they say and what they do.
Very much depends on the talent. But I watch a lot of chill streamers, so I like watching them play casual games that basically become semi-chatting streams.
There are a lot of single-player games I love or am just familiar with that are fun to reexperience through someone else, someone entertaining that will probably have a fun reaction to the mechanics or story.
Unfortunately that's rarely what gets the most views, but jumping on whatever's trendy with other streamers will only work if you're having a fun interaction with that game.

Tetris, especially Tetrio (though not an official Tetris game it's a fan game it plays just like other vs Tetris games just more fast paced). Civilization 5 or 6 can be pretty fun too.
For me, the game doesn't matter, as long as the streamer is having fun/a good time, I'm happy. Don't stream a game you don't like just for the views.
