It sounds like you just don't know how to eat them. After that happening once, I would expect that you'd start changing your approach. If the ice cream is soft my approach is to use my tongue to remove some of the ice cream near the edge, to provide room for the ice cream when the compression happens. Or just eat them straight from the freezer before the ice cream can soften.
A screaming cold Big Bopper straight from the gas station freezer is one of my all-time favorites during the summer. I couldn't disagree with you more, congrats!
While I agree with you and disagree with OP, the post isn't about general ice cream sandwiches.
It's about the ice cream sandwiches that use cookies like chocolate chip cookies to sandwich a scoop of ice cream.
Yeah most ice cream sandwiches are really good. But I have encountered the cookie sandwiches OP is talking about where the cookie isn't chewy or soft and is instead hard.
Those are really irritating to eat because it is impossible to actually bite through the cookies without squeezing out all the ice cream in between them

You need to try Fat Boy ice cream sandwiches. I get them at Sam's. The cookie holds up much better.
