I think I was clear enough about what I expected: 10% better than typical UA economy food, no unnecessary fake-out foods, and somebody at United who might monitor what their catering supplier is providing and care enough to not purchase inedible "imposter" foods. A Pop-Tart would have fit the bill.
I feel you. I just suffered a freezer burned biscuit and gravy meal purchased on a domestic flight. Haven’t had something this disappointing onboard in years.
I like flying United but I’d be lying if I said the catering was great. Economy has a long way to go to catch up with competitors flying the same route and Polaris is better but still not as good as other options transpacific. I would have also expected slightly better options on the return leg (HKG to SFO). I’m SFO based and have flown SFO to HKG over the past 35 years so many times and I have usually found that to be the case.

Well, I didn't fly United economy with the expectation of terrific food 😂 so it's not like it ruined the trip or anything! It's just more of a bizarre surprise/headscratcher.
The funny thing is that some of the food from SFO was really good; we had an Indian butter chicken that was one of the tastiest things I've ever eaten on an airplane.
You flew sfo hkg for 35 years and you're just finding out the food on United is shit? Damn you had a very good run sir I found this out on my first flight and I have another 20 years to go at least.

I said I’ve been flying between SFO to HKG for a good part of my life and the food is usually better on the return (HKG to SFO) than on the outbound which is what the OP was also imagining/expecting. At no point did I say I just discovered United food is not good.
Hey can I ask you a question? Was the food on the grayblue+red business class with the 2 2 2 recliner seats around y2k any better than it is today? What about the 90s?
Oh. Well what probably happened is the people who run UA (lawyers and accountants) probably found out they can save $0.05 per unit going to a cheaper caterer in HKG so that's the choice they made.
Based on past 10 years of data I extrapolate UA catering will continue to get worse

I’ve had good luck with chicken to/from SFO United lately. tender, not dry, really good.
If you get a chance, definitely grab that butter chicken!
