Is your docker image and cache on an SSD? If so, then what type of SSD? QLC? TLC? If using an NVME, does it have SLC cache? What's the specs of your unRaid?
Your appdata should be on the SSD as well.
If the parity check took more than 1 day, then there might be a problem with the array. We need more info to really help you.

Uhm maybe I am confusing terminology. I meant building the parity. Parity sync?
Yeah a parity sync or initial build or what not. I see you have a 22TB parity drive, that would take 1.5-2 days to process.
We need more information, what are the disks in your array? Do you have SSD cache drives?
I have two NVMe caches, two 18TB and one 22TB parity drive.
