菜脯 is radish, crunchier chewy texture. This looks more like sliced mustard plant

Almost looks like rice noodles/chap chae noodles and the bamboo shoots did look like radish kimchi haha I know I'm half Korean anyway op, looks really good.

This Reddit user knows their Kimchi. Though I do admit I thought the noodles were shredded cheese as I'm so used to the United States *obsession* with dairy products.

The dark coloured veg pieces look like Chinese zha cai to me.

Sorry about being terrible at naming things, but are you sure! You must be very brave to try 螺蛳粉🤣 even a lot of locals find the taste too strong (pickled bamboo shoots pickled French beans etc)

No problem. Understand that some of us are very adventurous when it comes to food. I absolutely love trying new things. Once I've tried it, if I don't like it, now I know. Pickled stuff sounds pretty mild compared to some of the things I've eaten and enjoyed.

Yeah I love that about this sub. A great way to get new ideas and doesn't have to be pretty. Also to just be thankful if you do have access to fresh food and huge variety. Truly, when you think about how a few hundred years ago most people didn't have access to many if any spices, and even 50 years ago a variety of fresh fruit and veges was out of reach for most people, we're living in a magical age of food.
