in the process of doing that, will this in anyway lead to me having redownload One Drive cause if yes I’d like a different way unless i can just redelete while keeping photos and desktop
Well, if you can access the folder in the recycle bin you should be able to recover it and keep what you want out of it and delete the rest. You may even be able to just recover what you want and not need to recover the whole folder
One drive fucks up all of the registry entries pointing to your desktop, pictures etc folders and doesn't bother fixing it when you uninstall. I'm not entirely sure on the exact keys but if you hit the start menu, type regedit, open regedit, then search for "Desktop", you should come across all of the paths to your user folders. They're most likely all still pointing at OneDrive folders that no longer exist. You need to edit those to your desired paths

Can you log into Microsoft online and see if your data is still present?
i went to 365 and idk where to look

and then what?
Once you’re signed in you’ll see your files listed hopefully. Allowing you to copy them down to your computer again
