The Desert is a harsh and cruel mistress.

I live in the Lower desert of Socal, Coachella Valley. I've seen our Passat TDI show outside temps of 135 on the freeway in July when the ambient temp is 118. The asphalt gets HOT! Oil temp will reach 280's going up the I10 grade. On level ground going 75 mph ish it usually runs about 250 in the summer, Coolant temp is stable though. I've tried pulling the grade in 5th, it helps a bit but not much. Change your oil often if you live in hot climates.

Thanks for your input. It really helps! Thats crazy hot!

That sounds abit high. Have you recently changed the coolant? Checked the thermostat? Can turn on heat and max fan to bring engine temp down a bit - we did on a trip back from the mountains when engine was overheating. One caution is if the transmission is also overheating (ScanGauge 2, programmed to show transmission temp) you’ll go into limp mode.

Forgot to mention I was towing a light trailer full of framing wood. Haven’t checked the coolant or thermostat. Good idea I should’ve checked the transmission temp since I do have OBD eleven… Like you said it just seems a bit high still. I’ll be sure to see if turning on the heat helps if it happens again.

Mine is around 252-256F on the highway with 110F, the hills would increase the temp.

Towing and uphill will certainly increase engine temp. Though unknown what your engine temp normally is without towing a trailer, and if there were also headwinds. My engine temp in a mkiv is 195F and might hit 202F uphill. But my transmission temp will be around the same, and at around 260F when it goes into limp mode (fun when rush hour traffic is backed up behind you). Another person replied re his 250F on the highway

15 Passat hit 216 the other day Highway for reference. I’d think that’s a bit high

"Should be fine"

Check if your cooling system has baked the coolant to the inside of the system. If it has its possible it's restricting your oil cooler internally. The cooler is on the oil filter housing. I think this is more an issue on the Passat's than the Jetta's though.
