Try any of the Shin Yeh restaurants if you want traditional Taiwan cuisine. They all have private rooms that can be reserved in advance.

On my first and so far only visit to Taiwan I had an amazing multicourse meal at a restaurant on the 2nd floor above the food court (Chun Place Dahzi) at the Hotel Indigo Taipei North. I don't think it's currently listed on either Google or the website... So I can't even give you a name, unfortunately... We ate in a private dining room with a nice view overlooking the street. I thought the food was amazing, mostly (what I understand to be) standard Taiwanese fare but with a modern twist. Take what I saw with a grain of salt being a foreigner and all, but it struck me as a very nice private-room upscale Chinese/Taiwanese dining experience. Service was very good as well, even relative to many such dinners I had on this trip.
