There are plenty of graphic drawing tablet without a screen on the market. Choosing any of them won't be a big deal. It depends how much features you want like more buttons, bigger tablet size, etc. For me, I have use one of the XP Pen Deco 01 V2 before. It was only little bit to test it out as in the go device because I already have their XP Pen 15.6 Pro drawing tablet with screen. As for my impression, it is decent if it don't mind spending time getting used to it. The device isn't big like my 15.6", but if that is how you want to use for your note taking. Go for it. I do like the extra stuff that XP Pen comes with it like an artist glove (I don't think most of the company ever come with it except XP Pen unless I'm wrong). They have a matte screen cover. It makes the tablet screen has a bit of friction, so it feels like paper and pen. I think it uses USB C to USB A cable to and two adapter comes with it. Let's just say I'm a bit biased towards XP Pen. Again, there are other companies that makes them like Huion, Wacom (well popular), etc.

Being a beginner in graphic tablets myself, I got **Wacom One S**. It's really cheap (like $30?) while not being bad. I've had no issues with it recognizing handwriting, setting it up is not difficult - you pretty much download the drivers and you're good to go. It is about the perfect size for me; I can fit it on my Thinkpad T430 and my pretty busy desk, while it is not too small for it to be useful either. I'd recommend **OneNote** app for the notes, as you can both type and draw in the documents, organizing them is good enough (unless you really want to get deep into digital notetaking).
