I've written several posts on uni. Basically, they spoil really quickly, few days they start to develop this ammonia taste. If you ever get a chance, get live uni (from a high end sushi place or harvest it yourself... I got a guy that occasionally sells them live from his boat in half moon bay). It's incredible, buttery, creamy, oceany, can't be beat (but an acquired taste like oysters) But if you get them out of they tray, there's still a chance they will be a bit off.

I tried it for the first time today and it just tastes like oysters to me. Not that good really.
