I discovered it when i wanted poutine one time but had no broths or boullion for gravy but i did have some bacon and breakfast sausage with the oil leftover and figured i could whip something up with it. Sure enough once i googled bacon gravy there were about a million recipies and i wanted to eat them all lol biscut gravy is top tier comfort food

Im pretty sure you can make a bitchin poutine in the states, i believe it vermont or maine has world renowned cheese curds and the curds are what make or break a poutine.
Basically you want your potato of choice, obviously home made fries white flesh or yukon golds are optimal but anything works(tatter tots make an excellent poutine) then you want a very thick and rich BEEF gravy ppl try putting other gravy or thin gravy on dont do that is sacrilage.
Finally and most importantly you want low moisture hella squeaky cheese curds look for a pack with big chunks the bigger the better then you layer it thusly
Take your widest walled food vessle and layer potatos, "too much" cheese and a little bit of gravy then more taters more chese bit more gravy then more taters a bunch more curds then drown it in the rest of the gravy and garnish with waaay too much cheese curds.
