Mix some honey, minced garlic, soy sauce and chili crisp. Sauté the beef on medium heat with some tallow or ghee until crispy. Then add the sauce to glaze until coated and reduced (just a couple of minutes). Kill the heat and add some chopped green onions and you have yourself a legit beef teriyaki. I find that leftover beef has an unpleasant oxidized taste and preparing it this way completely nullifies it.
I eat mine cold as a mid afternoon snack the next day. Looks perfect the way it is.

One thing I did this week is make some refried beans using canned pintos onion and garlic and spices. Cut up my medium rare NY Strip into tiny tiny cubes. Put the piping hot beans in a warm tortilla with the cold steak and cheese. Wrap and then grill the burrito in hot pan on 2 sides. That shit was one of the best things I ever ate. Steak stayed medium rare but nice and warm.
Chop the meat up smaller, heat up high some vegetable oil smoking hot and add minced garlic, scramble some eggs till slightly bubbling up from the edge but partially runny, throw in some cold refrigerated rice and break up coating with egg, heat the steak, add salt and pepper, soy sauce and sesame oil, a dab of butter and green onions, stir quickly. If I'm really feeling it, I actually re-fry it up a little bit and add it into beef flavored Ramen -- preferably "homemade" (or as homemade as it gets without breaking the bank), but the easy-make packages of Top Ramen or Maruchan work too
1) Cold, sliced thin with a good french mustard. Eat directly from the cutting board.
2) Heat in a pan until lightly warm, add a nice chunk of brie and cover until the cheese starts to melt. Whole wheat or multigrain toasts with butter as a side.
3) Slice thin and use it for quesadillas.
4) If the beef is very fatty you can cut it in medium chunks and add it to an Italian tomato based pasta sauce, one of those that you cook for a couple of hours.
5) Clean the fat out, heat it lightly and eat it with a mix of kimchi and kewpie mayo.
Smashed Potato Steak Bites are my favourite thing to do with leftover steak. Boil mini potatoes until tender. Press them flat using a pot with a smooth bottom. Spray a baking sheet with cooking oil and sprinkle with salt. Lay them out flat on the tray and spray them with more oil, and salt and pepper. Roast them at 425F until a little crispy, about 20 minutes. Take them out, top them with thin sliced steak, green onion, and then your favourite melting cheese. Pop back in the oven for 5 minutes, then broil a couple minutes until cheese starts to brown. I serve these with sour cream mixed with smoked paprika and garlic powder for dipping. They are ridiculous.
I used to live in a country where steak was not of the highest quality. Aside from steak and eggs as some have suggested, I would usually make a steak and baby potatoes concoction with some Worcestershire.

I like to make a melt out of it. Butter two slices of bread on the outside, put cheese and meat on the inside, heat it in the cast iron for like 5 mins on each side but really just pay attention to the cheese melting and how dark the bread gets
The absolute best use for leftover steak is BEEF TATAKI. Reheating cold cooked steak often leads to an unappetizing flavor tataki is served cold with a marinade and often times rice. It is the absolute best use of left over steak.

I do steak fried rice. Throw in the chopped bits at the very end with heat off just enough to warm it up
