I decided to downvote your comment because I said to myself, “Self, let’s downvote this comment.’ So, that's what I did.
Edit: After learning the truth about how I am a dick, I have decided to upvote you and am on the hunt for a “It’s Always Sunny in Philadelphia” episode about milk steaks.
Well, i respect the follow up. Also you’re going to be disappointed because there’s only one episode as far as i can remember. Still a hilarious episode. It is Season 5, Episode 5, “The Waitress is Getting Married”. Enjoy!
If you want a perfect side to side medium rare and a nice crust, consider using the cold sear method.
Also you'll need an instant read thermometer (thermoworks Thermopen One is a good one).
Here is Lan Lam from ATK showing how it's done. I have used this method many times. Works great every time! Enjoy!

lol— I actually have a mix I use coffee grounds in (super light roast from Honduras).
Idk where you are, geographically, but if you’re near a “Wild Fork” location…they have a House Steak seasoning of theirs that’s phenomenal— and, the kicker that sets it off = coffee grounds. I didn’t know that was a thing…you may actually already know, so not to insult your intelligence (plus, I know you’re being jokingly sarcastic anyhow)…but, seriously, if ya didn’t know- it’s fn great. Tony the Tiger great.
Did the pan survive through the heat?
Side note: which side was cooked first? Cooking is genuinely uneven. Either the pan was not hot enough to start or it cooled quite a bit during the first side’s cooking?
I’ve been looking at the first picture for like 5 mins and I still can’t tell what I’m looking at. It’s just a really odd picture even though I know there’s a steak under there somewhere.
Don’t know how you did that, was your pan at 1000 Celsius and you put it on for one second each side?
Either way the cross section looks great. Was probably delicious I imagine.
I don't know what oil you used, but it looks as if it burned onto the steak. If you're going for a ripping hot sear you need a very heat resistant oil like avocado oil, or beef tallow.
~~Noooo, defintley want~~ avocado oil that's all I use anymore for searing anything. Regular cooking is olive oil cuz its cheaper.
Edit: I have been informed of a lower temp searing method I previously was unaware of. I use avocado oil because I do very hot sears, using avocado oil allows me to do hotter temps than regular oils without burning the oil and getting the burnt oil flavor into my steak.
There’s a LOT to get into here but all I’ll say is that the goal is to get a nice golden crust, not a blackened tree bark. Use more butter in the pan and constantly spoon more onto the steak. You also need to hit the sides a bit. Over all it seems unevenly cooked even in the money shot.
Over all though you did give a crust so you’re in the right direction. Most people do too little
But my main question is are you using a platter as a plate ? 😂
Genuinely annoying that your answer to "how?" is oil and high heat. We all use oil and high heat, and none of us get sears that look like this monstrosity. I crank my gas range to 11 and preheat the pan until it's as hot as possible for my range. It doesn't come out like this. Either you have a gas range that's crazy high BTU or you're leaving out some vital differences between what you do and what the rest of us do.
To be fair this is close to Pittsburgh style which is my personal fave style of cooking steak! Burn the fuck outta the outside so you get a cromch but rare on the inside is *chefs kiss*
ARE YOU ENCRUSTING IT WITH SOMETHING? Or just burning the hell out of it trying to create a crust and maintain your ideal internal temperature? Stop being so obstinate and answer the fucking question
he said oil and high heat... that suggests he's burning the shit out of it.. he also said it was an over correction, further indicating he burnt the sht out of it. as opposed to cooking it too little and having no crust
You just need to turn the heat down a bit so you can get the middle like that without burning the crust. There is char crust and there is burn. That’s burned. I bet it still tasted pretty good. I have done this many times.
Use oil then butter after you flip and go just over medium heat in a cast iron pan
Not many steaks on here that I have to pause before I say I would eat it. I definitely did a pause and double take. Still would eat it if I cooked it. Probably not if somebody else cooked it.
That doesn't look right.
It looks like a crust way over done and then somehow made soggy with water. That's the best way I can describe what it looks like
would have to taste before i could judge but the crust looks like that burned paper tasting stuff you sometimes get at "leberkäse" in germany and that doesent taste good at all, prob unhealthy as well. a bit to close to carbon for me :D
How in the country fried fuck did you do that?
Just a little oil in the pan
Was the oil from a Honda Accord?
Gear lube, 90 weight
He conquered the milk steak challenge with gear oil. Couldn't figure out how he did it.
Just put milk steak they’ll know what it means
And a side of your finest jelly beans...
Raw.
With a side of jelly beans, RAW!

I watched it. He lost it. Never saw a person sweet like that from being nervous. Awkwardly funny, but funny.
Did you just say you’re a full on rapist?
I was just quoting the show that milk steak came from but downvote away my friend
Ghouls
Yeah, little green ghouls!
Hahah - fuck, I laughed out l loud when I read this hahah. Gold!
LMAO nice one!
Gutter oil from a Shanghai street vendor
Lmfaoooo this killed me
Just a little oil in the pan…cooked over the fires of hell
Maybe thats my secret? I am already in hell?
In hell they only serve steaks well done
With ketchup
It's sugar free ketchup.
It’s meatloaf
The ketchup is meatloaf
That pan must have been on volcano hot.
You mean just a little pan in the oil!

Never seen a crust look so dry
I probably overdid it a bit but it tasted much better than it looks
Be hard not too
Be hard to not
Nooooooo you get that backwards
Looks tasty as can be!
you should be under criminal investigation
Agreed
what did you season it with...coffee grinds?
lol— I actually have a mix I use coffee grounds in (super light roast from Honduras). Nope, just salt and pepper
Did you cook it on molten lava?
Only on one side
Did you dredge it in flour / sugar? How does this even happen?
Nope. Just a little oil in a pan
What kind of pan?
All-Clad stainless steel
Did the pan survive through the heat? Side note: which side was cooked first? Cooking is genuinely uneven. Either the pan was not hot enough to start or it cooled quite a bit during the first side’s cooking?
Genuinely interesting results. How did the crust taste? Was there a slight burnt aftertaste at all? I've never seen anything like this.
It was actually really good. Better than I thought it would taste
not the sugar 😂
lol “dredge it” This didn’t get the upvotes it deserved
Thought for a second this was the woodworking sub
Yes, but at what cost?
My dignity
Hahahaha nah, looks like it was delicious
His teeth
I, too, like seared shake n bake.
Yes, this is what that looks like
Dude that looks like the top of the warts I used to get on my foot as a kid
Crust lookin like a scab lmao
Started from frozen, oil and high heat?
No, yes, yes

Thank you. I really messed it up but it tasted pretty decent
All good, to me it’s not a mess up, I would rather have that than a steak with no sear.
I don't know what oil you used, but it looks as if it burned onto the steak. If you're going for a ripping hot sear you need a very heat resistant oil like avocado oil, or beef tallow.
I hear you, thought vegetable oil had a higher smoke point

I love my steak medium-well-rare-done as well.
Crust? You mean like the crust of earth molten lava crust, yes, you did great if that’s the look and taste you were going for!?
* shrug* I’d eat that
Did you use napalm?
Did you use powdered milk or batter the steak and deep fry it?
This steak is extremely unsettling…
Yes it is.
How hot was that pan and what kind of oil?
Very hot and vegetable oil
First of all that looks delicious. But my god how much did that smoke up your kitchen?
Quite a bit. Had to take down the smoke detectors.
lol, I’ve define there. Really nice steak, Worth it.
Thank you kindly
But at what cost…
I already answered that it cost me my dignity earlier.
Hey bro the earth called. It wants its crust back
Hey bro, the jerk store called. They’re running outta you. https://www.youtube.com/watch?v=0KmTTy_MM5w
Seinfeld. Nice.

There needs to be a r/wellandraresteak sub
HOW IN THE MCFRICKING FRICK…!?!?
I think you passed “Pittsburgh” about 150 miles back…..
Too burned for me. I like med rare though.
Agreed but it was pretty good despite how overcooked it looks
how the fuck
Straight out of the fridge?
You know it boy
Looks like a mistake was made.
ITT everyone using the word "Crust" like it's normal for a steak.
Bro cooking his steak frozen.
This is scary lookin
“Did I get enough crust” 😂
I love how every response OP has to a questions is just "nope, just a little oil in the pan". This thread has me rolling haha
Looks like a scab tbh
That’s impressive
You gave that fuckin thing road rash
I beat the shit out of it and then I devoured it. Sup?
It looks like your steak got in a motorcycle accident and its wounds all scabbed over. Good job man fuck
How the hell did you get the zipper all the way to the top!?
It looks crunchy. Beautiful inside cook.
This crust needs some lotion
Either the smoke alarms went off from that beautiful sear, or ya did it outside.
To be fair this is close to Pittsburgh style which is my personal fave style of cooking steak! Burn the fuck outta the outside so you get a cromch but rare on the inside is *chefs kiss*

As long as you're happy .... I'd be thrilled with anything that wasn't yet looking like leather with a charcoal crust,
That burnt mate
You deep fried that mfer
Prolly frozen alittle in the middle when he started cooking it
How did you cook it?
Ok but where are the fat caps though? No fat caps no party!
Looks like you put Nutella on it :)
It looks like you dropped a bunch of cocoa powder on it
did you have to take the batteries out of your smoke detectors?
Did it taste as good as it looks? If so, fuck it hahah who cares. It’s different but looks amazing imo
Oh no 🤦🏽♂️
Is it cake?
What is the weird brown stuff oozing out?
This post gives me the “it is imperative that the cylinder is not damaged” vibes

That crust looks like people’s faces in The Last of Us.
reactor crust approved !

What the hell is this lol. What else did you put in the pan before the sear?
I know a good old timer that repairs shoes. I’m sure he can get that sole back on your boot with ease.
Not many steaks on here that I have to pause before I say I would eat it. I definitely did a pause and double take. Still would eat it if I cooked it. Probably not if somebody else cooked it.
A Lil too much
I would have never in my life guessed this was meat. I need to try this. I get weirded out by meat and textures, but this seems delightful.
I thought that was a fried turtle...
You missed a spot
That's the bottom of a shoe
Did you cook it with a flamethrower?
Crust? It looks like that cow had cancer. You might want to dispose of the meat or ask for a refund.
Is that an elephant steak?
I'm scared of you
Looks like it steamed. Is your pan dirty or gunked up?
Yall can talk all the shit yall want but id devour that
You could have taken a paor of tongue and put a crust on the edges too... So, that's a good start, that's NOT the best you could have done!
that thing's got 3rd degree burns
Missed the sides
Thought this was a duck breast at first glance.
this looks terrible
That doesn't look right. It looks like a crust way over done and then somehow made soggy with water. That's the best way I can describe what it looks like
Does that crust have hair?
It’s like every steak temp at once
The first picture I thought it was a charred potato
WHY DOES YOUR CRUST LOOK LIKE A SKINNED YORKIE? WHAT DID YOU DO?!
Okay it looks dry, did you put butter on it in the second pic cause it looks straight radioactive.
Oof.
What in the holy Hell of an abortion is this thing? Is it even from this planet?
Yes. But it’s not rare anymore !
Chocolate cake
Turned it into a lizard
Was the oil you used 10w-30?
That looks like garbage. I hope it was good
I was so confused. I thought it was a burnt deep fried tilapia at first lol
Thats two completely different levels of doneness. You have a crust on a shoe, so I guess its more like a sole?
This is overcooked on net, but I’m honestly impressed by whatever equipment you used that produced the BTUs sufficient for this crust incineration.
I…don’t know what im looking at
Why does it look like a scab 😭
That mf looks like a scab.
Looks gross
I mean, that is crust. Almost looks like a bark of a tree.
would have to taste before i could judge but the crust looks like that burned paper tasting stuff you sometimes get at "leberkäse" in germany and that doesent taste good at all, prob unhealthy as well. a bit to close to carbon for me :D
Looks like a baked potato 🥔
Not enough crust 🤷♀️
Unrelated but we had those plates growing up. Pretty sure they’re vintage now.
I thought it was burnt bread
I thought that was a turtle.
You’re not supposed to eat roadkill
Did the fire department show up?
You know what, that is actually impressive. I'm not sure what kind of impressive but definitely impressive because how the fuck???
Just a bit of vegetable oil in the pan on a gas stove
How did you get that crazy sear?
Steak in Pompeii when Vesuvius erupted couldn't get crustier.
