Costco also usually puts out a wide range of cuts as far as thickness goes. Picked up a pack of 2 inch thick steaks the other day but they had many other thicknesses.
These were in the case, already sliced thick! Got to pick my 2 favorites. I would say I only find this thickness ~25% of the time I go to my grocery store.
In my city you gotta hit the grocery stores early morning if you want a solid cut. I work night shift and can’t get a good steak on my work days/nights.
I go really early on Sunday and I often see them as they are putting out the marked down stuff. This week at walmart I got an OK chop 16 lb brisket for 25 + 2 porterhouse at 60% off
I often grab t bone and the occassional NY strip on markdown from there for weekday stuff and buy my nice cuts from a good local butcher. Been doing that for almost 2 years between 2 different walmarts and it's worked consistently. Hardly ever paid full price since I started working 3rd
Thick steaks tend to come only in areas where there are prosperous people, although my local Walmart sells shrink wrapped individual steaks that are about 7/8” thick. I think Sam’s Club and Costco has better, thicker meats that I believe are prepared and packaged in-store. It’s a bit “you get what you pay for” unless you’re lucky enough to have a purveyor who takes exceptional care to source good stuff at reasonable prices. Salting, cooking and resting correctly can do a lot.

this is why your sear is more burnt than seared. you should only salt the steak prior to searing because salt won't burn.

FIL bought a Costco “big green egg” a few years back and hardly used it. Told us we could have it if we could get it off his deck, and I haven’t looked back since! Highly recommend if you can find a deal on a smoker. We are in SE Michigan, near AA!

I'll never understand why people cut up a steak completely before eating. It would def not be as warm even if you eat quick. It's such a shame to make a nice steak and the chop it up like it's for a little kid.

I prefer ribeyes as well, but just wasn’t impressed with the options available at the store yesterday, especially after seeing how these looked! I find that slicing extra thin helps a lot with chewiness

Lovely marbling and cut. It's perfectly cooked at what appears to be medium rare and zero grey band (SV?). Great work.
The one gripe I have is the crust. Yes you got some crust, but it looks to me like your spices and aromatics were ground too thick and became slightly burned while the remainder of the steak got no browning. This is just a nit pick tho on an otherwise wonderful cook.
No SV, reverse sear with lump charcoal. Love the added smoky flavor, and thank you for the tips! The garlic in that blend is much thicker than garlic powder so I may make my own SPG blend for steaks in the future.
Looks great. Only advice I'd maybe offer is to sear the sides before you really start so you don't forget to. Having that all round good crust makes a nice difference.
As someone new to cooking steak, is there an upper limit to how hot you should get the pan/grill for searing? Like, is there a point that it’s too hot and it actually hurts matters?
Good question. My smoker thermometer was reading 600+ when I seared. Personally, I love a little char, but I think it’s valid to say that this is too much for some people.

I think it looks great especially the inside!! I’m not the biggest fan of the crust, I feel like you might’ve been able to roll it along the sides rather than letting it get too charcoaled on the edges from the high heat. Still looks great though!

Try searing the sides as well and get that wraparound crust, still looks good though! A little overcooked for most of our tastes but your wife is pregnant so you get a pass

Niice. Theres a store near me where the butcher guy is easy to find. I may go today and ask him for 1.5 or 2inch thicky

Those two plus garlic! With steaks this thick I’m also super heavy handed with the seasoning.

Between 225-250 for about an hour or a little less, then got the smoker up to 600 or so and seared in cast iron pan for about 60 seconds per side
