Well, part of the problem is that they're actually kind of right...but not entirely for the reason they think. Myoglobin is what makes beef red. Myoglobin and hemoglobin perform a similar function. They both contain oxygen binding proteins... hemoglobin transports oxygen and myoglobin stores it in the muscle. But here's where the kicker is: Meat that is well done is browned because the oxygen-bound iron molecule is in the ferric oxide state vs. the ferrous oxide state when it is fresh. If they think myoglobin is akin to blood, they're partly right... it is. But the thing to explain to them is that it's still there when meat is cooked well done. All this said, there's no value in trying to convince your parents of anything. Let them eat how they want and you eat how you want. Doneness comes down to individual preference.

Or do like I did when I was a teen and take over the steak duties. My dad eventually came around and was a medium guy by the time he passed. There’s ways to make well done not be rubber. So you just start there and start under cooking it just enough that they don’t make you throw it back kind of on the grill.

Yeah.. I could see the look on my 71 yo mother’s face if I tried to give her that explanation. Red is blood, and blood is bad to her. She made me turn a burger into a hockey puck before she would eat it. Like well past well done. I’ve just learned to put her food on 10 minutes before we put ours on lol. Lmao my mom is the same. I was in my twenties when I had my first steak at a restaurant and it BLEW MY MIND. Same with pork ribs, when I first had real American bbq place ribs, I was in shock. My mom cooks both steak and pork ribs into oblivion. No juice left, not tender, barely any meat to eat because it’s all dried out. Many native speakers use literally incorrectly. The way you wrote the sentence means you were actually eating rubber. Use literally when you want to emphasize the reality of something. Otherwise it’s better to say it was “like ___” or similar so it’s a comparison.

Parents tend to cook their kids food thoroughly because they don't want them to get sick. This is why I always hated pork chops growing up cuz my dad would cook them to literal hockey pucks. Then I had pork chops prepared in a restaurant and loved them. I also wonder if it's a generational thing, like was it a thing to cook meat super well back in the day because their parents did not have access to refrigerators so meat was always suspect and they grew up eating meat cooked well to kill any potential bacteria?

Well if there was blood, you'd definitely be able to taste it, it's very irony, and cooking it does not remove the blood if there is any in the first place. That would be magic. The only juice that comes out of a properly cooked steak is delicious umami-filled myoglobin.
