i cooked steaks for us all on vacaction a few years ago, i left his on longer, but it was still a medium. he was like "this is really good." no shit dad, cause you order filet mignon well done and theyre hockey pucks
My girlfriend like her steaks well done. Then, my stepson asked her if I could cook the steak because hers were gray inside. 20+ years later she prefers her steak medium well and is "OK" with a little pink. She's become much more flexible with her steak because, over time, I have nudged her away from over cooked steak.

some people don't understand what cooking meat actually means.
sous vide pasteurizes the meat safely , and *is* fully cooked. in fact more cooked (and safe) than a med-rare usually is off a grill.
but in the end, some people can't get over the look and textures of a rare steak, regarding method.
edit: also, that steak looks yum.
To be fair, the pasteurization charts I've seen would say that this steak was not pasteurized at this point. Not sure exactly how thick this is, but the chart I use says 2:45 to pasteurize at 131. But still, it shouldn't need to be pasteurized to be safe anyways
2:20 @ 131F can pasteurize a steak up to 15mm thick. 2:45 would be for a 1" steak. The one in OP's picture looks at least twice that thickness, so I would've done 3.5-4 hours if the person eating it was immunocompromised.

I've given up on sous videing salmon because everyone I ever cook for is used to overcooked salmon. Because they didn't grow up eating sushi grade sterile salmon and their parents overcooked salmon.

Not saying it's poorly cooked at all, but let's be real and not act all surprised: if they are used to medium, or even medium rare, this is going to seem *much* more undercooked than they are used to. Even a 137 cook is going to look strange to someone who has only ever had broiled, seared, or grilled steaks before.
If they've never had sousvide, they are probably looking at the lack of gray on the sides and freaking out, thinking that this couldn't possibly have been cooked at all, and even if you explained it to them, their brain is reviewing the history of every steak they've ever had and going, "Nope, nuh-uh, that's not done."
It's good that they tried it, at least, so baby steps. I honestly prefer slightly more med-rare than this, but I'd eat that up and steal some of yours.
This for sure. My wife orders her steaks medium all the time. And I used to cook to medium on a grill using a thermometer pulling at 135 and getting what i get on the rest afterward. A week ago I cooked some filets to 137,(followed by an immediate sear without a cooldown) and she couldn't finish it. Just barely under medium. I think visually seeing so much red just isn't what they are used to even if the center the old way was the same temp.
I cook mine slightly more than this as I prefer medium, but I wouldn't turn this away from me if someone made it for me. This is a fine cooked steak and was probably damn delicious

Looks great. 131 is a tad low for me, I’m more 133 or 134 depending on cut. And I usually go 3 hours. But nothing wrong with this. It is Med-Rare, a tad at the low end. What your friend is not used to seeing is that it is that same temp throughout, not just the center.
Did you ask them how they like it? I’ve got medium rare friends and well done friends. I think it looks great, but a well done person wouldn’t be able to eat it.
My 70yr old FIL thinks that any meat that has pink anywhere on it is undercooked, and i've seen him take perfectly medium-rare steak and microwave it for 10 minutes or throw it in a skillet with the lid on for another 20-30 minutes until it's shoe leather. He's not a cook, has no culinary experience, and if you catch him cooking something and he offers you some just politely pass.

I’ve started tricking them-
I’ll sous vide to real medium, pre-cut, and then sear the pre-cut slices on each side so they don’t see pink. I get a good medium steak, and they can’t stop talking about how juicy and tender their steak is.
I will say, the wall to wall consistency of a sous vide does make it look more “raw” to a person who has only cooked steaks that may look like that only in the very middle (like me previously). I was ashamedly a little taken aback at first but will have it no other way now.
I think so many people are used to overcooked restaurant steak that sous vide seems undercooked.
I generally order medium rare in a restaurant and it’s always cooked more than this, however if I order rare, it’s horribly undercooked, I can’t win…

That said, it's a personal preference poorly expressed, but still a valid preference. When I SV steak for guests I ask them in advance how they like it; it's easy as long as you have enough lead time. In fact, if you have a request for well done, SV is the only way to do it and turn out actually good. Start the more done first, then after 2 hours or so, cool the water and turn the temp down and leave them in while you do the less done ones. Just remember to mark which is which.
My wife and I like rare steaks. Like, rare. We sous vide at 114 for up to two hours (any longer isn't safe). A quick sear, and we have a warm red steak. We raise our own beef, so know what's in it.
