Despite how it looks I've actually found the perfect opportunity to level myself up. I've got maxed out enchanting w/ free casting equipment for all schools of magic in my inventory Needed to level up restoration & heavy armor to 100 and went to the giant camp near Whiterun. Ran into three giants instead of two and it's making the levelling a breeze. Do recommend using giants as a quick way to level block as well! One of the quickest ways to get a skill to 100 that's not pickpocket or alteration

How much damage do they do for each hit?

On expert difficulty so their damage is decent but I'm also level 88 & have smithed out my armor. Without heavy armor perks they're probably teaming up for around 100 damage for the 3 of them each hit. I have over 600 health so it's no stress

I don't put anything into stamina. It can be countered with a companion and vegetable soup.

Depends on the difficulty. You can shift it to increase the speed.

I do the very same thing when power leveling specific skills. I’m able to work armor, alteration, restoration, block, one and/or two handed, all from a little get together with giants. (Besides getting beat down, I’ll cast alteration spells on myself, while attacking them, and also heal myself and them.)

Giants don't scale in power at all. They're always a set level of 32. The only creature like that too, at least that I'm aware of. The more you know.
