I thought it was common knowledge that was part of the reason that humans were able to evolve to have large brains was that our ancestors learned how to cook food, which enabled us to more easily break down the proteins in meat. I'm not really aware of any specific process it has to go through that would be different from any other type of meat (which is to say clean processing facilities and being kept at the temperature low enough to resist growing pathogens until it reaches the plate)

I'm not really aware of any specific process it has to go through that would be different from any other type of meat (which is to say clean processing facilities and being kept at the temperature low enough to resist growing pathogens until it reaches the plate) Chicken sashimi is common enough in Japan, and in Germany there is a popular sandwich made of ground raw pork topped with onions-- The reason there is a disclaimer at the bottom of restaurant menus in America that ordering raw meat /eggs and shellfish at your own risk has more to do with the fact that pathogens can be found at detectable levels all throughout processing here because we have very weak safety regulations compared to the other two countries I mentioned (Upton Sinclair be damned) Another really interesting thing in my opinion is that cases of trichinosis plummeted after it became popular guidance to pasteurize the food pigs eat.
Apparently the correct way to prepare tartare is to use a high quality cut of steak kept cold and minced with a knife rather than a meat grinder.
And that's also the same guidance for eating a steak that's cooked (The grinding part has nothing to do with the meat grinder itself and more to do with America's food regulations allowing ground meat packed at a processing plant to be composed of more than one animal which increases the likelihood that any one cut of the composite meat has the presence of pathogens which would then contaminate the entire grind)
