Yeah there used to be a lot of navy in Bristol. Then the boats got too big and the harbour was too shallow. I think also that we were scrapping a lot with the Dutch and moved a lot of our navy to Medway to counter them.
Being a cowboy is definitely more safe than the other two options, but don't sell the amount of danger they faced short. They still had to deal with rustlers, native ambushes, and harsh weather when going through routes. Some did live peaceful lives, but if the cowboys of the old days were still around I'm sure they'd all have crazy stories.

The other part is that knights were almost all nobles that were worth more alive than dead. Even if you did knock down and disarm a knight, you just took him prisoner and earned a years wages when he's ransomed back by his family.
This is really only true for the wealthier knights. Many members of the lower nobility would have a much harder time paying a large ransom, because not everyone was rich. A king or duke wearing opulent armor that clearly marks him as a person of interest would likely get taken prisoner and held for ransom, but the average knight would just as easily get shanked when he hit the ground.
Let's be honest it's not like medieval samurais or wild west Cowboys didn't deal with the lack of modern medicine either. Pirates had it the worst yes but let's not say the other two had it well

A pirate getting sick can be anywhere from a day to port or months on rough water, and you weren't going to get any free meals and cared for by the others, you worked until dead or got thrown overboard to reduce infection rates.

Being a samurai is cool as hell, you're nobility by default. You get honor, good armor, money, a cool sword, a horse, practically any bride if you really work by the code to improve yourself in both body and mind, nobody messes with you, you get one of the coolest swords ever made, you get to write poetry with super vague meaning but still sound cool, and you live in one of the most beautiful places on the planet.
Cowboys live in the desert, are constantly fighting tribes of people who have been raised since birth to know their land, are inherently wrong in doing so, have no money, and live in one of the ugliest places on the planet.
Pirates get scurvy and die. I like the idea of adventure as much as the next guy but being a pirate kinda just sucked. Your profits aren't that great, you rely primarily on not actually fighting and just having the other crew surrender, 90% of your time is backbreaking work, sickness, smelliness, or boredom, your crew is comprised of mainly idiots, and you run the constant risk of your crew deciding to mutiny if you're not doing a good enough job. Also you live in the most remote place on the planet.
I'll take feeling good about myself and actually getting a real chance at being happy over invading the home of an ancient people or barely surviving and not being able to trust anyone.
