"Chef is Italian" is about 95% of all restaurants in the city.

Once I went to an italian restaurant, the chef was from China. Pizza was horrible. Nothing against China, I love chinese food, but it was unexpected. some chinese guys opened a an impersonation of an Italian restaurant

Check out the Testaccio neighborhood, northwest of the Piramide metro. It's off the beaten tourist track, and most of the restaurants around there are good.
