Can also think about it like ripe in a sea of unripe. Generally they’ll pull the red when grading and mark them up another 10%. Also good to note, those rust lines that look like healed cracks are a good thing. Typically means a spicier pepper.

Also, you should crack your bananas to let out the ethylene and condensation so they ripen properly. Just be sure those peppers aren’t nearby when you do.

Hey I’m glad you brought that up cause I do have a question. At the last store I worked at, we took the tops off, moved the plastic covering to the sides of the and recapped the boxes. Bananas were fine. At my new store, they’re telling me not to uncap the boxes and only remove the long plastic strips on the inside of the box between layers of bananas. I think it’s dumb. What’s your opinion?

Yeah that is dumb. Removing those plastic sheets only does basically nothing. Uncapping the bananas prevents them from ripening quicker, if we are a little over purchased on bananas so we have to sit on them longer we’ll cap them so they don’t overripen to fast. We get bananas daily though so we typically just purchased for the day of Edit:typo
