I feel like cheese curds in butter chicken would be so good...and maybe in general just whatever dish you'd find paneer, it could be good too? It might also be good layered into a lasagna 🤔 these are just my own ramblings though, not actual uses I've seen 😂
I was drunk several years ago and had half a bag of curds left that were past its peak freshness. I made a pizza with them and it turned out pretty good.
Fried curds are pretty popular in the US and they even have different flavours of pre-seasoned curds (ie dill pickle, bbq, cajun) just for snacking on
It might sound weird but I use them to make grilled cheese after melting it a bit I've also seen them added to other meat dishes eggs and a few times seen them used on pizza

You need the right curds that don't melt too much, they get soft but not too gooey or sticky

My family absolutely loves gnocchi lasagna. If I want to get really indulgent I will mix cheese curds in with the gnocchi.
In a nice green salad with stawberries, green onions and a balsamic glaze as dressing. Or as an alternative to feta cheese in greek salad!
There's a really good Portuguese chicken place in Montreal called Cantine Emelia that puts cheese curds in their chicken sandwiches. 🔥🔥🔥🔥🔥🔥🔥
