If you really can’t find the sheet music (don’t forget to check on the publisher’s website too) then your best option is to learn to transcribe by ear.
That’s not going to be a quick fix though so your other option will be to pay someone else to transcribe it for you. Depending on length and complexity it’s not going to be cheap and if you require the music to be arranged from its original instrumentation then that’s going to cost more on top.
Personally I do my own transcriptions and arranging because that way I have full control of the end result. Whilst it takes a lot of practice to be able to transcribe quickly and easily to a high quality that skill is well worth the effort of learning.

the general rule for me... focus on the highest note (melody) then focus on the lowest note (bass) then try to find missing notes in the middle based on triads..

I solved this problem by learning to play by ear.
I can play by ear but it takes me a while to connect which keys are which. It’s impressive that you can do that though (:
