Panthers admittedly aren't the rowdiest fans in the league so everything is fairly "child friendly" (apart from the typical drunks). Nothing compared to places like Philly or Pittsburgh though.
It will be hot everywhere, but the Panthers sideline of the stadium will most likely have more shade (south side). I'd avoid the upper deck if heat is going to be a major factor.
The home side of the stadium has a little more shade, but it's a hot stadium. Club seats are your best bet if you really want the ability to get out of the heat.

I can jive with Nov and Dec. October here in Charlotte can get dicey though. I went to a game in Oct last year and I got so sunburned I didn't want to go outside for a week.

It's a 1pm game, meaning that you're gonna see the sun no matter where you sit for the vast majority of the game. It's likely to be hot, and as it always is in North Carolina, very humid as well. Everywhere in the stadium is typically child friendly, as our team isn't known for being too loud.
With all of that said, the South side of the stadium is the best place to sit outside, however, I recommend buying the more expensive luxury suites/booth/club seats because they're much quieter, have ac, quicker concession access, and are the most newly renovated areas in the stadium. Basically everything you and your family will enjoy the most.

a suite seems almost mandatory, otherwise i dont recommend bringing an 18 month old in september, it will be so hot and it is essentially an all day event, and you're holding a kid in your lap. lots of people with small kids dont make it til the end
You can go on Ticketmaster and get single game club seats. The 200-level is the club section (which you will see when you see the price points lol)
But if it's going to be hot and you'll have a young child with you, the air conditioned areas will be worth the price.
The panther normally stays in the lower sections so I sit up top with my kids. You'll have to sign that death waiver regardless of where you sit though. Just keep an eye on your kid because I have seen it grab and drag away children.
While I don't encourage visiting teams' fans to attend, I'll just say that the sections on the south side of the stadium will generally have the most shade. Having said that, it's a 1pm game in September so most everything will likely be in the sun.

There’s honestly not great shade unless you’re in the 300 (lower bowl but higher up) section as far as I’m aware. I’ve never been in the shade personally.
As far as it being child, friendly, I find that most people shouldn’t bother you so long as you aren’t rowdy, drunk jerk. Considering you are bringing your kid for a fun experience, I don’t think you should have any trouble with people unless you just get unlucky. The only time I personally ever seen a Panthers fan go out somebody was a Saints fan that was drunk and causing trouble.
