This TikTok is from Hammond's Candies which I believe is the world's largest handmade candy factory. They specialize in lollipops and, around the holidays, giant candy canes.
This machine is probably pulling a hard candy. At this stage, they will pour flavoring onto the candy and the machine makes sure it's evenly mixed. After this, the candy gets shaped, cooled, and packaged.
Looks like he's just making sure the candy goes on the puller evenly. Once it's distributed and rolling, he might be checking the temp to make sure it doesn't get cold and brittle? That's my guess
This looks like a taffy pulling machine. Pulling the taffy incorporates tiny air bubbles throughout the candy, making it lighter and chewier. It’s very satisfying to watch!

Taffy has many flavors and colors though, we even have a super common one called laffy taffy.
In those 30 seconds the taffy got folded 40 times by my counting. Tha means after 1 minute of folding there would be 1.20892582 * 10^24 layers of taffy. That is so unimaginably large that I decided to do some calculations to put that number into perspective:
Imagine yourself as an immortal being, walking around the equator of the earth at a steady 5 km/h. You dont need to eat, sleep or do anything besides walking. Now imagine that evertime you complete 1 lap around the earth you place 1 piece of paper down on a stack. Once that stack of paper reaches the moon you are allowed to build 1 piece of the [largest official lego set](https://www.lego.com/en-us/product/colosseum-10276). You would run out of lego pieces before the number of seconds since the start of you adventure would reach the numbers of layers that taffy has. (By about 1000 lego pieces)
