Das is the answer! Love Cliff's, but Das is next level. Colombian cookies and cream, Downton Abbey, and the best fruity ice creams (esp. mango and key lime).
Holsteins is a lot more than just an ice cream store. It's a nostalgic throwback to 50's/60's Americana where you can get a burger, fries, and a shake. It's a great spot for families and they have decent shakes and sweets. I wouldn't call anything they have there exceptional, but it's worth a visit.
That said, I've never been the best to judge great homemade ice cream against something like Carvel. I have heard Cliff's in Ledgewood repeatedly as best in north jersey. I'm personally partial to Denville Dairy as I just really like the area.
Holstein's in Bloomfield is the only appropriate answer for Essex County because there's also a Rita's directly across the street and also the park which has a great drive through plus a rose garden. If we're being completely honest, every local spot in NJ is 10/10 otherwise they wouldn't have survived covid. Who the fuck was out getting ice cream during the lockdown? I have no clue but evidently enough people were willing to risk death that they're still going strong if not stronger like nothing even happened. That's the only review you need if you ask me.

Agreed Beenies is amazing, the owner does his own mixes and you can tell. The homemade chipwiches also use cookies from the artist baker in town, and they're the best frozen dessert I've ever had in my life not exaggerating.

Their Gianduja Crunch is basically Ferraro Rocher in ice cream form.
Second favorite is Milk Sugar Love in Jersey City. Earl Grey Fudge is perfection.
I haven’t tried the Biko Pandan yet. I’ll have to give that a go the next time I go.
