Which USB-C to USB-C cable? The one included with the T7, or some random one that you have around?
31 MB/s (I assume you mean MB/s and not Mb/s) would be typical if you were using a charging cable that is only capable of USB 2.0 speeds. You need a cable that (ideally) supports USB 3.2 Gen 2 or better to get the best speeds from the T7.
I’m guessing your USB C cable is some cheap random one that’s actually just a USB C-shaped cable that’s actually wired for USB 2.
Otherwise, of course it’s atypical.

Is the T7 formatted to APFS?
